Chawanmushi (茶碗蒸し), meaning “steamed in a tea bowl,” is a silky, savoury custard that has been enjoyed in Japan for centuries. Made with a delicate blend of eggs, dashi, soy sauce, and mirin, it is often enriched with prawns, chicken, mushrooms, or ginkgo nuts. Unlike other Japanese egg dishes, it is eaten warm with a spoon rather than chopsticks, its comforting texture making it beloved by all generations.
